Glory Bowls: What are they, why you should try them, and how to make your own!

Whenever I am visiting my friends in BC this is our GO TO dinner dish. We usually have a group of about 6 of us, and we are always looking for something easy, tasty, and nutritious. We also have a few allergies and food preferences among our group (vegetarian, gluten-free, egg-free, to name a few). So glory bowls make for an excellent solution!
Glory bowls are a GREAT summertime meal option, and incorporate nutrient rich foods to keep you feeling energized, happy, and healthy. Plus, they actually taste good, and you can tailor them to your own taste buds! Here is how you can make your own glory bowl:
STEP 1 PICK A GRAIN
You will need 1/4 cup of one the following:
- Quinoa, cooked OR
- Brown rice, cooked OR
- Millet, cooked OR
- Buckwheat, cooked
STEP 2 PICK A PROTEIN:
You will need 1 serving of one of the following:
- 2.5oz salmon, cooked how you like OR
- 2.5oz chicken, grilled OR
- 2.5oz tofu, cooked how you like OR
- 1-2 hard boiled egg(s) OR
- 1/4 cup cooked black beans OR
- 1/4 cup cooked chickpeas
STEP 3 PICK YOUR GREENS
You will need 1/2 cup of cabbage (red or green) PLUS one of the following:
- 1/2 cup spinach OR
- 1/2 cup arugula OR
- 1/2 cup spring mix OR
- 1/2 cup kale
STEP 4 PICK YOUR NUTS OR SEEDS
Choose 2 of the following:
- 1 tbsp walnuts
- 1 tbsp pecans
- 1 tbsp pumpkin seeds
- 1 tbsp sunflower seeds
- 1 tbsp cashews
- 1 tbsp almonds
STEP 5 PICK 2-3 OTHER VEGGIES TO ADD IN:
- 1/4 cup broccoli
- 1/4 cup carrots
- 1/4 cup beets, cooked
- 1/4 cup cauliflower
- 1/4 cup cremini mushrooms
- 1/4 cup asparagus, steamed
- 1/2 an avocado
- 1/2 cup chopped Brussel sprouts, steamed
STEP 6 MAKE YOUR DRESSING:
Blend ALL the following ingredients in a blender together until smooth to make your dressing:
- 2 tbsp nutritional yeast
- 2 tbsp water
- 2 tbsp soy OR tamari sauce
- 2 tbsp apple cider vinegar
- 1 garlic clove
- 1 tbsp tahini
- 1 tbsp olive oil
Add to the bowl your grains, topped with your veggies, add in your protein, sprinkle your nuts and seeds, and then lay on the dressing!
