Summertime Recovery Pudding

Summer has finally arrived! It's the season of outdoor sports, running, biking, hiking, walking, swimming, and the list goes on and on! As social beings, we tend to break out of our houses, spend time outside, and use a little more energy than we do in the winter months. That's why it's so important to make sure you are getting the right nutrients. Your body craves more food, refreshing foods, different foods than it does in the winter! Have you noticed?

 

I wanted to leave you with a recipe that is delicious, refreshing, and packed with recovery nutrients for those days you are spending outside. It's a perfect after dinner treat to satisfy a sweet craving and, most importantly, helps the body recover from all of the hard work you are putting in this summer! Introducing the Summertime Recovery Pudding!

 

INGREDIENTS 

  • 1/2 cup cooked teff grain

  • 1/2 cup unsweetened coconut milk

  • 1 large banana, ripe

  • 1/2 an avocado 

  • 1/3 cup cocoa powder

  • 1/3 cup protein powder

  • 3 tbsp maple syrup

  • 1 tsp vanilla 

  • 1 tsp cinnamon

  • 2 tsp maca powder 

  • 1/4 tsp ginger, ground

  • Pinch sea salt

 

INSTRUCTIONS  

  1. Bring 2 1/2 cups of water, teff, and pinch of sea salt to a boil in saucepan. Once boiling, reduce heat, and simmer over medium-low until teff is tender and a gelatinous mix forms. Stir occasionally to prevent clumping. Takes about 15 minutes. Add more water if need be. 

  2. Place all other ingredients in a food processor or high-powered blender container and blend until smooth

  3. Add teff once cooled and blend together

  4. Refrigerate for 2 hours before serving. Garnish with berries, nuts, cocoa nibs, and/or coconut flakes! Add some coconut whip cream and indulge (my personal favourite)!
